A story born _in the family
Since 1940, the Pavone family has passed down the craft of olive oil making with passion, dedication, and deep respect for the land.
Grandfather Vito Vincenzo was the first. Today, with Enzo and Gianfranco, the third generation continues to produce extra virgin olive oil with the same authentic spirit—modernizing machinery and exploring new paths, while staying firmly rooted in tradition.
In Castellaneta, in the heart of the Ionian Arc, we cultivate our own olive groves, allowing us to oversee every step of the production process: from harvest to milling, all the way to bottling.
A fully controlled supply chain, cold extraction, and cutting-edge technologies—updated in 2024—ensure an honest, natural, and truly genuine olive oil.

We cultivate over 60 hectares of olive groves across the hills and plains of the Ionian Arc, caring for each tree with dedication and deep respect for the land.
Our production is the result of a careful selection of typical Italian olive cultivars: Leccino, Coratina, Frantoio, and Nocellara.
Each variety contributes uniquely to the sensory profile of our oils:
Leccino – Delicate and well-balanced, with herbal and almond notes, it brings roundness to the blend.
Coratina – Intense and rich in polyphenols, it gives our oil structure, character, and a pleasantly spicy finish.
Frantoio – A historic variety that adds freshness and aromatic complexity, with green notes of artichoke and freshly cut grass.
Nocellara – Soft yet lively, known for its fruity aromas and a refined, persistent bitterness.
The diversity of cultivars and soils allows us to craft oils with a harmonious yet distinctive flavor—an authentic expression of a land that has spoken through its olive trees for generations.
